Bio: Chef Jack B. London Jr. was born in Denver, Colorado on February 2nd, 1984 to Naomi and Lawrence Pops. Jack would live in Aurora, Colorado from birth until the age of 9 when his family moved to Gary, Indiana. It was here that his love of food began to take shape. He grew up watching his dad in the kitchen often asking questions and helping wherever he could. Jack got his first taste of the culinary arts in high school where he was enrolled in the culinary arts program for his junior and senior year. It was there where Jack officially fell in love with the food industry.

After completing high school Jack received a culinary arts scholarship to attend The Culinary Institute of Michigan. This is where he was first introduced to the ACF. While in culinary school he started his professional career working for Aramark at Kentucky State University as a cook. In 2007 Jack would graduate from The Culinary Institute of Michigan with an Associate’s Degree in culinary arts. Still working for Aramark he would relocate to Indianapolis’s Butler University and start training to be a Sous Chef. In 2012 he would leave Aramark after 8 years to become a Sports and Entertainment Executive Sous Chef for Centerplate at Lucas Oil Stadium, and the Indiana Convention Center. After 2 years he would receive his first opportunity as the Executive Chef of Our Lady of Fatima Retreat House for the Archdiocese of Indianapolis. Currently Jack is on the culinary team of the Affinity Group Michaels sales team.

Jack has made so many contributions to this industry but the one he is most proud of is being the vegetarian/vegan Second Helpings adjunct instructor. Jack has been quoted saying “so many people have given their time to help me become who I am, this is my opportunity to give that back”. In 2016 Jack won the ACF President’s award. On November 17th, 2017 Jack completed his CEC Certification through the ACF. In 2018 Jack became the Indianapolis Chef of the Year and began the process of becoming an ACE evaluator to continue his mission of giving back to the industry that gave him so much.
